  • 1 pound lean beef or turkey breast, cut into cubes
  • ¼ tablespoon pepper
  • 2 cloves garlic, minced
  • 1½ tablespoon olive oil
  • 2 stalks celery, sliced
  • 2 medium onions, sliced
  • 2 tablespoon whole meat flour
  • 1 medium tomato, finely minced
  • ¼ tablespoon salt
  • 5 small potatoes, peeled and cubed
  • ¼ tablespoon cumin
  • 1 medium red/ green bell pepper, sliced
  • 12 small carrots, cut into large chunks
  • 5 cups beef or turkey broth, fat removed
  • 1 ¼ cups green peas

Directions for cooking

  • Preheat oven to 375 degree Fahrenheit
  • Mix pepper, cumin and salt with whole wheat flour
  • Put the turkey or beef cubes in the prepared mixture
  • Move out excess flour from the mixture
  • Heat olive oil in a large skillet
  • Add turkey or beef cubes and sauté until they are brown. It is better to cook till 10 minutes
  • Then put the turkey or beef in an ovenproof casserole dish
  • Add onions, celery, minced garlic and peppers to skillet and cook until vegetables are tender.
  • It is preferable to cook for 5 minutes
  • Stir tomato and broth
  • Boil and pour over turkey or beef in casserole dish
  • Cover the dish tightly and bake for 1 hour at 375 degree Fahrenheit
  • Remove from oven and stir in potatoes, green peas and carrots
  • Bake for another 25 minutes until the mixture is tender
