The food provided for diabetic patients according to some people are not tasteful because there are some ingredients that should be avoided for the sake of diabetic diets. However, it should not stop diabetic patients from enjoying their life and making a tasteful diabetic pasta recipe becomes a great challenge for the cooks.

Below is a good diabetic pasta recipe for patients who crave for delicious pasta with seafood touch.

 

What you need:

  • 8 oz of sea scallops (frozen but better the fresh ones)
  • 2 oz of whole wheat pasta (penne is better)
  • 1lb (around 2 cups) of asparagus spears, better the fresh ones, cut into small pieces
  • 2 tsp of butter
  • 1 tbsp of minced garlic, from around 2cloves
  • 15 oz of canned evaporated low fat milk
  • 2 tbsp low fat Neufchatel cream cheese
  • 2 tbsp of Parmesan cheese, finely shredded
  • 1 tbsp of lemon juice
  • 1/4 tsp of lemon-pepper (seasoning)
  • Fresh flat leaf Italian parsley (if desired)

How to prepare:

 
1. Prepare the frozen scallops by thawing them or washing the fresh ones and rinse well then dry them using paper towels. Put the scallops aside. Prepare the pasta penne based on the instructions and in the last 3 minutes, put in the asparagus. Stir it once or twice until the pasta is done and then drain it. Keep the pasta penne warm in a serving bowl. Make sure you use a big bowl so there is still extra space on the penne to put the scallops.

 

2. Prepare a big skillet and put the butter in it to melt with medium or high heat. Put the garlic in and stir for about 10 seconds then add scallops. Cook the scallops and garlic for about 4 or 5 mins. Stir them once or twice and when the scallops have become golden brown, put off the fire and place the scallops on the penne in the serving bowl. This way the pasta is still warm.

 

3. Meanwhile, beat the milk in the skillet and turn the fire to low or medium heat. Put in the lemon juice, cream cheese, lemon-pepper seasoning and also Parmesan cheese until the cheese is completely melted. Turn the flame low.

 

4. The next step is mixing the pasta, scallops and the cream. Put the pasta and scallop in the skillet and carefully stir to make sure that all pasta and scallops are coated with the cream. Serve it with some Italian chopped parsley garnish if you like. Delicious dish made of diabetic food recipe is ready to serve for 2 people.
