This appetizing mushrooms sauce pasta for diabetic patients can be added to your favorite diabetic pasta recipes collection. For people who have diabetes, picking the right diabetic diet is the only way they can follow to maintain their blood sugar in normal level and this combination of pasta, many kinds of mushrooms, and fresh vegetable can be a good option to be served for lunch or dinner.


What you need to prepare:

  • Pasta or spaghetti 1 box/250 g
  • Olive oil 2 tbsp
  • Fresh parsley, chopped ½ cup
  • Red onion, chopped ½ cup
  • Garlic, minced ½ cup
  • Cherry tomatoes, cut into halves 1 cup
  • Assorted mushrooms:
  • Fresh white 1 cup
  • Fresh Shiitake 1 cup
  • Fresh portable 1 cup
  • Dry porcini 1 cup
  • Lemon juice ¼ cup
  • White wine ½ cup
  • Pepper 1 tsp
  • Salt 1 tsp
  • Permesan cheese, shredded ½ cup

How to prepare:


1. Prepare the dry porcini mushrooms. Put it in a bowl and add hot water until all mushrooms are covered in it. Leave it for 20 minutes to soften and change the water with cool water and let it stand for about one hour. Then, drain the mushrooms, rinse them using cold water and let it dry. Set it aside.


2. Boil some water with a little oil in it to cook the pasta or you can prepare it based on the instructions on the package. When it is done, drain the pasta and put it in a big serving bowl. Set it aside.


3. Prepare a big nonstick skillet and put the olive oil at a medium or high heat then put in the garlic, onion and also parsley and stir them until they are sizzling, or for around 2 or 3 minutes.


4. Add halved cherry tomatoes; stir for about 1 until 2 minutes or until they get soft and juicy.


5. Add the mushrooms; stir often for about 5 mins until they become tender.


6. When the mushrooms are tender, put in wine and lemon juice and simmer for about 5 mins. Don’t forget to stir frequently and add salt and pepper. Take it from the burner and pour the sauce on the pasta. Add shredded parmesan and it is ready to serve.
