One of the worth trying diabetic menu is diabetic pasta recipe with vegetable salad. This recipe is easy to make and has enough nutrition needed by the diabetic patients.  Moreover, it is easy and it does not need a long time to prepare. You will just need pasta of any shape, such as penne, farfalle, rotini, shells, macaroni or other kinds and also some vegetables for the salad.
What you need are:

  • macaroni or other whole-wheat pasta, 12 oz
  • olive oil, 1 tbsp
  • chicken broth (low sodium), ¼ cup
  • chopped garlic clove, 1 tbsp
  • chopped onions, ½ cup
  • unsalted /plain diced tomatoes, 1 can (28 oz)
  • sliced mushrooms, 1lb
  • sliced bell pepper (¼ cup red and ¼ cup green)
  • shredded zucchini (medium), 1 cup
  • basil, 1tsp
  • oregano, ½ tsp
  • some lettuce leaves if desired

How to make it:
This delicious diabetic pasta recipe is easy to make, yet you will need to do it carefully so that the pasta has a good taste and look.

  • Cook the pasta based on the directions on the package then drain it carefully. Put it in a big plate or bowl and then add olive oil. Toss it and set it aside.
  • Heat the broth in a big skillet using low flame and put in the tomatoes, onions, and garlic and stir them for about 5 minutes.
  •  Put in the pepper, mushrooms, and zucchini. Stir it once or twice and cook for about 5 minutes.
  • Then, put in the oregano and basil, stir, and turn off the heat.

Pour the vegetable mixture onto the pasta and stir gently until all the pasta is covered in sauce. Serve while it is hot. This tasty diabetic pasta recipe can also be served cold. Before the salad is being served, we must keep it in the fridge for about 1 hour or so and then take it out from the fridge to be served well-chilled.
